Taste autumn with our homemade green tomato chutney

When the last garden fruits struggle to ripen, nothing beats a clever recipe to avoid waste and extend the flavours of autumn. Green tomato chutney is one of those generous preparations that turn humble ingredients into a fragrant condiment, perfect for accompanying winter dishes. Sweet, tangy, and lightly spiced, it brings a touch of sunshine to the plate as the days grow shorter. Here’s how to prepare it at home, easily and with just a few ingredients.

 

Ingredients:

  • 1 kg green tomatoes

  • 2 onions + 1 garlic clove

  • 4 small apples

  • 250 g sugar

  • 20 cl vinegar

  • 6 cl oil

  • 1 tsp ginger

  • 1 tsp mixed spices

  • ½ tsp chili

  • 2 tbsp coarse salt

  • (optional: raisins)

Method:

  1. Cut the tomatoes and let them drain with the salt overnight.
  2. Rinse and drain the tomatoes.
  3. Peel the apples.
  4. In a pot, sauté the onions, apples, sugar, and vinegar.
  5. Bring to a gentle simmer until the mixture becomes syrupy.
  6. Add the spices and the tomatoes.
  7. Cook slowly until the liquid evaporates.
  8. Transfer into jars.

    Prepared with simple ingredients and a bit of patience, this green tomato chutney pairs beautifully with aged cheese, a slow-cooked dish, or a savoury toast, adding a touch of warmth and acidity every time. Stored in jars, it also makes a lovely homemade gift — perhaps even for Christmas. A delicious way to celebrate autumn and ensure nothing goes to waste.
